Vegie-beef Stew

INGREDIENTS.

-beef pieces (cleaned), 1 cup carrots (peeled and diced), 1 cup green beans (chopped), 2 medium potatoes (diced), half large tomatoe (grated), 1 large onion (diced), 1 tbs black pepper, 2 tbs salt, 2tbs oil, 1/2 beef stock cube, 1 tbs paprika, 500ml water, 1tbs corn flour, 2tbs Crème de Cassis.

COOKING METHOD.

– Heat 2 stove plates to a medium temperature. Add the oil to a pan and put on one plate to heat, Whilst on the other plate put water in a steamer pot to boil. (The steamer pot is for the carrots and green beans)

-Whilst the oil is heating up wash and pat dry the beef pieces, seasoning them with black pepper and salt. Add in the beef to the heated oil and allow to fry until brown on both sides.

– After the beef has been put to fry, wash the carrots and green beans and chop them into pieces. Add them to a steamer pot to cook. (DO NOT ALLOW THEM TO FULLY COOK.) Remove and put aside after they have cooked half way.

-Once the beef pieces have fried, remove and put aside. Using the same oil add in the onion to fry until golden brown. Adding in the tomatoe, beef stock, black pepper and salt consecutively.

– After adding the first ingredients add in the steamed green beans and carrots to the mix. Start to stir until all the ingredients are mixed and then add in the potatoes and the Crème de cassis. Continue to mix the ingredients and allow them to cook until the flavours have blended in together.

– Whilst the ingredients are cooking add in the beef pieces and mix them in with the other ingredients like you did with the carrots, green beans and potatoes. At the same time mix the water and flour together and add to the ingredients, adding in the paprika as well. Allow to cook until the stew is ready. Continue to stir once in a while whilst cooking.

– Remove from stove and serve once the soup is thick enough and beef pieces are soft.

NOTE: Continue to add water if the beef pieces are not soft enough. Cooking at a medium temperature allows the food to cook well.

Best served with rice, potatoes and nshima. Bon appetite!

Sweet-pepper sausage stew

INGREDIENTS.

Sausage pieces (desired amount) , 1 large onion(chopped), 1 tbsp tomatoe sauce, 1tbsp chutney sauce, 1 1/2 tbsp honey, 1 tsp ground black pepper, 1tsp paprika, 1 tbsp salt, assorted peppers (sliced) 1 1/2 tbsp cooking oil, 1tbs corn flour or regular flour, 1/2 a cube of beef stock.

HOW TO PREPARE.

– Preheat the stove to a medium temperature. Add cooking oil into a frying pan and wait until the oil is heated.

– Once oil is heated begin to fry the sausage pieces until golden brown on all sides. Then remove the fried sausage and put aside.

– After removing the sausage, switch from a pan to a pot and using the same oil, begin to fry onion till golden brown, adding in the tomatoe sauce, chutney sauce and assorted peppers consecutively. Allow peppers to cook.

– As the peppers are cooking, add in black pepper, paprika, salt, honey and the beef stock cube (the honey is what will make the peppers sweet.)

– Continue to stir, allowing all the flavours to blend in. Remember the sausage you put aside? We will need it for our next step.

– After stiring the ingredients which should take not more than 5 minutes, add in the sausage and mix. In the same process add in the flour mixture. (Which should be the tablespoon of flour mixed with 1 cup of water). Leave to boil.

NOTE: whilst the dish is boiling, continue to stir until the soup is ready.

This dish is best with Nshima, rice and pasta. Nshima too for my nshim Bon appetite!

CREAMY CHICKEN RECIPE

INGREDIENTS.

Chicken pieces, 2 tbs butter, 1 large onion (finely chopped), 1 roasted red and yellow pepper (chopped), 175g Cheese (grated), 200g brown mushroom(chopped), 100g Leeks (chopped), 1 cup Half and Half, 2tbs salt, 1tbs grounded black pepper, 1 tbs cracked black pepper.

HOW TO PREPARE.

– Pre-heat the stove to a medium temperature whilst seasoning the chicken pieces with 1 tbsp of salt and grounded black pepper.

– When the stove heats up, melt the butter in a frying pan and add in the chicken pieces to fry. NOTE: all pieces must brown on both sides.

– Once fried remove the chicken, and using the same oil add in onion, salt, cracked black pepper, and roasted peppers. Ensure that the onion is cooked before adding in the peppers. Onion should not brown.

– Whilst the onion and peppers are cooking add in the mushroom and the leeks. The mushroom should be slightly cooked before adding in the leeks. Leave the ingredients to cook and the flavours to blend before going to the next step!

– This is my favourite step because its what brings out the creamy chicken! After you’ve allowed the ingredients to cook, add in the half and half. Mix it up whilst adding in the grated cheese. Allow it to cook for at least 2-3 minutes before you add in the chicken pieces.

– once the fried chicken pieces are added in allow to cook with the mixed ingredients, whilst continuing to stir. It does not take long before the dish is ready. Give it about 5 minutes to fully cook then VWALA! BON APETITE! . NOTE: covering the pot allows the food to fully cook.

Sunday trip to Lilayi Lodge.

Road trip, adventure, having a day out dining at one of Lusakas safari lodges. Those where my thoughts before I left for lilayi lodge last Sunday afternoon.

It is one of the most beautiful places I have visited so far, the place itself is peaceful and quiet, the air is fresh and clean, and the environment is literally just nature at its finest. I am a big fan of road trips and that is exactly what I got, it was about an hour drive from were I stay but it was worth it. Once we had arrived at the place, the service was there to attend to us. Their service through out our visit was great, they were kind, approachable and readily available to assist us. I give their service a good 10/10.

We were lead into the dining area by our main server who gave us suggestions on where to sit. There is a dining on the inside, one on the balcony and one that is upstairs by the reception, we chose the one that was on the balcony because it had such a beautiful view.

Once we settled in we decided to order some food. They brought us each menus, but I had already downloaded their menu earlier on, so I knew what I wanted to order. We had two separate servers attend to us for the main meal and for the drinks, which I felt was good because it prevented one server from being overloaded with orders from each of us. The food didn’t take long to come, we had waited for about 15 minutes maximum which is a good enough time to wait. Their food portions were good, there was neither too much nor too little food on our plates. (Attachment of food and drink ordered below)

To my disappointment the mojito wasn’t included in the drinks menu so I had to make a special order. Despite that, our drinks where the first to arrive. It was not the best mojito I have tasted. I felt the alcohol was a bit too extra and I could barely taste the minty part of the drink. I did taste that some granadilla was added to the drink as you can see some of its seeds in there. However, despite all that the drink was good enough and I managed to finish it so I vote it to be a 7/10.
Chicken Espetada.
( This is deboned char-grilled chicken thighs, served with boiled vegetables, French fries and peri-peri sauce.) K200
My favorite part of this meal was the chicken thighs. They where soft, fresh and well prepared. It definitely had some garlic added into it for that extra bonus of flavor. The green pepper and onions certainly did justice to the flavor of the chicken aswell. I was quite unimpressed with the vegetables as I feel there was little to no spice added and I could barely taste the salt which lead me to add in salt for myself. The French fries and the peri-peri sauce were a good addition to the meal I enjoyed them both. All in all this meal was a 8/10.

Pork ribs Bali Hai

Disappointingly the pork ribs didn’t take first place in this meal. The sauce I feel didn’t do much justice to the ribs. I didn’t taste any chili but I did taste the ginger and coriander which I feel didn’t do much to enhance the flavor. The vegetables tasted the same as the ones from the chicken espetada so that was a minus. However the fries gave this food an extra plus. Which luckily put the pork ribs at a 7/10.

After we were done with our food we decided to chance the last game drive of the day, which was from 16-17 hours. It was really fun to experience. We didn’t get to see many of the animals or the birds, one of the reasons was due to the time we went for the drive. It was a-bit too late to see many of the animals. We did see a few antelopes,some zebras and a few birds and the rest of the time it was just a drive through the park. It was actually really beautiful to see, peaceful and everyone was just enjoying the ride. (Attachments of game drive pictures below)

Would I go back to Lilayi? I definitely would. It was a beautiful experience and something I look forward to doing even more! I highly recommend it if you’re into long rides and you’re just looking for a place to enjoy a Sunday afternoon. It’s definitely a place for the books!

My first blog post!

Hey loves! This is my first blog post EVER and I am so excited. It will basically be a brief background about me and why I decided to start this blog.

My name is Kamiji Malasha and I’m a 22 year old from Lusaka Zambia. There is nothing really sophisticated about me other than the fact that I love food. I love to eat and I’m a die hard foodie. I’m a great cook and I love to explore on food once in a while. However I come from a family that has a strict timetable when it comes to food. It literally goes like this; Mondays = beans, Tuesdays = kapenta (small fish), Wednesdays= chicken, Thursdays = beef, Fridays = fish, Saturdays= dried fish, vimbombo or game meat and Sundays= special meals (this is when something ‘different’ is cooked). With this timetable honestly there is no exploring in food and it gets boring, eating the same food every week. So I decided that it’s best I go out and explore the wonders of food on my own. Don’t want to die not knowing how crabs taste LOL. So early last month my sisters and I decided that I start a food/restaurant blog. Where once in a while when I go out to eat I let people know about my experience with the restaurant and the food. So this is where we are. My blog. My restaurant/food blog.

I also decided to do some research on how food blogging works and one of the points I noted was to make sure there are enough places to blog about in my city. I’m from Lusaka, so after I did some research I discovered that we actually have about 40+ restaurants (excluding fast food restaurants btw). 40+ is a really big number and some of them I didn’t even know about. So this is what my blog will be about, discovering new food, discovering new eating places and letting you know about my experience witch each one of them. I’m excited to start my blogging journey and I’m hoping you’re excited to start this journey with me.

However, due to me being a full time law student, I’ll be posting up a new blog every after two weeks. Until I can sort out a better time table kindly bare with me on this one :). Look out for my latest update this Friday!
